It’s Pumpkin Season












Fall is officially here; which for many means its pumpkin season. From a nutrition stand point, pumpkin is a powerhouse of dietary fiber, anti-oxidants, minerals and vitamins.  From the taste side, can I get a “yum!” Especially since most food items that have had a fall pumpkin makeover are loaded with added sugar, salt and fats. Thankfully, pumpkin also can be used in variety of delicious -healthy- recipes that highlight fabulous fall flavors without the extras.

This pumpkin season try some of these ideas:

Add pumpkin to your salads
Toss together roasted pumpkin, dried cranberries and kale and lightly top with walnuts and balsamic dressing

Add pumpkin to soups and chili
Curried Apple-Pumpkin Soup
Pumpkin Chicken Chili
Turkey Sausage, Kale, Pumpkin Soup

Address your pumpkin sweet tooth
