Diabetic-Friendly Pesto Stuffed Mushrooms
Ingredients:
12 large button or portabella mushrooms
1/3 cup prepared pesto sauce
1/3 cup whole-wheat bread crumbs
Preparation:
Preheat oven to 350 degrees Fahrenheit
Place mushrooms, stem side up on baking sheet
Mix together pesto and breadcrumbs in a bowl
Spoon a heaping of mixture into each mushroom
Bake mushrooms for 18 to 22 minutes
